Emma and I have been the best of friends since
9th grade. Being an arbiter of quirk and kitsch, we bonded quickly over a
dated movie adaptation of Ray Bradbury's The Veldt, a story about the demise of
the nuclear family due to technology. However, it wasn't the story line,
but one particular scene in the movie that I knew we would be friends. A
random robotic voice announced, "You forgot the ketchup," and suddenly
a tray with a bottle of ketchup was elevated out of a table with a hydraulic
lift. We were both the only people laughing maniacally at
it.
There are very few people in this world that you
can laugh and cry with about rotund friends, fencing jokes, and Bruce Patman's
license plates. Em
always has advice in any sticky situation, always has her ear open, and may possibly be one of the
funniest and wittiest girls you will ever meet. And in a salute to Emma Rockett, here
is her Tuna Melt, renamed Emma's Veldt Tuna Melt.
What you will need:
- 1 can of tuna, 3/4 of water drained
- mayonnaise, 2 big spoons
- green onions, chopped
- tomato, thinly sliced
- pepper and salt to taste
- mozzarella/cheddar cheese to taste, grated
- 1 bagel, or "open faced carbs" of your choice
Directions:
- Mash the tuna into flakes.
- Mix in your mayo, pepper and salt so the
mixture sticks together and is spreadable.
- Mix in your sliced green onions into your
tuna mixture.
- Spread the mixture on to your bagel or bread
of choice.
- Cover with a thin layer of tomato and a thin
layer of cheese and place the other half of your bagel/bread on top.
- Toast the whole thing in the oven at 350F
until the cheese is melted.
